Hats Off Kitchens is the cousin company to Gillmer Kitchens in Sydney’s Northern Beaches. Gillmer Kitchens was founded by four brothers; John, Merv, Ron and George, along with their father Eleaser and they have been a family owned business since their establishment in 1955.
Jim Gillmer started working with his family in 1981 and founded Hats Off Kitchens when he moved back to the Central Coast to be closer to his family in 2005. His Aunty Terry was the Director of Gillmer Kitchens at the time and in 2009 Terry retired and passed Gillmer Kitchens onto Jim. Both businesses are now run from our head office in Charmhaven on the NSW Central Coast. Over the years there have been more than 30 family members involved in the company.

Owner & Managing Director
Starting in the family business in 1981, Jim Gillmer has spent decades shaping Hats Off Kitchens into what it is today. From hands-on experience to leading the company through an evolving industry, Jim takes pride in having a hardworking team behind him—one that turns clients’ kitchen dreams into reality.
With the next generation stepping in, he’s excited to see the business continue to grow. Guided by his favourite quote, “I never had a policy; I have just tried to do my best each and every day.” – Abraham Lincoln, Jim believes that consistency, dedication, and respect are the keys to success.
His most valuable education? Working side by side with his Grandfather Jack and Great Uncle Merv, who taught him the importance of hard work, integrity, and family values. Born on August 30th, Jim shares his birthday with Warren Buffett, one of the world’s most successful investors, known for his long-term vision and steady leadership—qualities Jim reflects in the way he has guided his business over the years.
When he’s not managing projects or planning for the future, Jim and his wife enjoy life’s simple pleasures: family, gardening, travel, and restoring old cars.
General Manager

Tanya’s expertise goes beyond administration, she’s dedicated to customer satisfaction, efficiency, and problem-solving, ensuring the business runs like a well-oiled machine. She believes in taking charge, reflected in her favourite quote: “Don’t ask permission to fly. The wings are yours, and the sky belongs to no one.”
Born on 25th October, Tanya shares her birthday with the first-ever Women’s Basketball World Championship in 1953; a milestone that marked a new era of leadership, teamwork, and breaking barriers. Much like the pioneers of that tournament, Tanya takes charge, stays organised, and ensures everything runs smoothly.
Outside of work, Tanya is all about family and the great outdoors. Whether it’s picnics, beach days, fishing, camping, or cheering on the footy, she embraces life with the same passion she brings to her work.
Kitchen Designer
With 16 years of experience spanning design, administration, and office management, Jenna Hartman (née Gillmer) brings creativity and expertise to every kitchen project at Hats Off Kitchens. As a designer, she loves helping clients turn ideas into beautiful, functional spaces that feel like home.
Guided by her favorite quote, “Life isn’t about waiting for the storm to pass. It’s about learning to dance in the rain,” Jenna embraces challenges with a positive mindset and a flair for innovation—both in life and in design.
Born on May 12th, Jenna shares her birthday with Katharine Hepburn, the legendary actress known for her independence and bold spirit. Much like Hepburn, Jenna values originality and isn’t afraid to push creative boundaries when designing kitchens that reflect each client’s unique style.
Outside of work, Jenna enjoys gaming, cooking, diving into documentaries, and spending time with her son. You’ll often find her exploring markets and festivals, always on the lookout for inspiration and new experiences.
Licensed Supervisor
With 40 years of hands-on experience in the building and kitchen industries, Stuart is a seasoned expert at Hats Off Kitchens & Gillmer Kitchens. From joinery to full-scale renovations, he’s seen it all.
His favourite quote, “Of course I want it yesterday… If I wanted it today, I’d order it tomorrow,” reflects his sharp sense of humour, keeping things light even when the pressure is on.
Holding licences in joinery, kitchen, bathroom & laundry renovations, and asbestos removal, Stuart’s knowledge runs deep. Whether it’s a complex build or a minor upgrade, he ensures every job is completed with precision and expertise.
Born on 20th March, Stuart shares his birthday with the opening of the Sydney Harbour Bridge in 1932, an engineering masterpiece built to last a lifetime, just like Stuart’s expertly crafted kitchens.
Outside of work, he enjoys spending time with his family and cooking, the perfect combination for someone who has dedicated his career to creating amazing kitchens.

Glenn’s favourite quote, “How do you soar like an eagle if you’re surrounded by pelicans!?”, reflects his quick wit and sense of humour—but when it comes to work, he’s all about precision and getting things right the first time.
Born on 15th April, Glenn shares his birthday with Leonardo da Vinci (1452)—a perfectionist, inventor, and master craftsman. Just like da Vinci, Glenn values precision, innovation, and attention to detail, making him an essential part of the team.
When he’s not keeping everything on track at work, Glenn enjoys spending time with family, watching footy, and traveling.
